It's an ancient Chinese Secret![8D]

Actually, the left and center racks pictured are filled with Imitation Crab meat, Cream Cheese (go cheap if you want, no need to spring for the Philadelphia brand unless it's cheaper), and Shredded Cheese (colby/Montery jack mix). These tend to have a richer (sweet) flavor.

The rack on the right (and my personal favorite) is filled with walmart's cheapest pork sausage, cream cheese, and shredded cheese (same as above).

For a little more heat we will sometimes add Smoked Chipotle powder to the mixture before filling the peppers.[]

I never did the crab and cheese ones, but salmon and cream cheese on the smoker is always a hit a my parties.
