Can someone tell me the dimensions and thread size of the screw that most of the replaceable carbide cutter tools use, to hold the cutter bit in?
I'm going to try to make one of those tools as well as a chatter tool... any suggestions or experiences in doing the same would also be appreciated.

they are not all the same -- get the screws to match the insert you decide to use.

Chatter tool -- Ron Sardo made one from a sawzall blade (he is the lead for Woodturners Resource). Saw one there that was built with a sorby replacement tip held in a piece of pipe by a grub screw.

Chatter tools are not high in science -- but need to be used on endgrain.

Can't remember the sizes I used, but found them at Tractor Supply, in the machine screw section. I have made two so far. One round and one square. If you go to look for one, take your cutter with and find one that will seat well in the countersink. That is what I did.
