I've got a couple of slabs of Cedar, about 9' by 12" and 2" thick. I'm looking at joining them and making a coffee table.

But, what finish can I use on the cedar? I have some voids to fill which is not a problem, I'm planning on some natural shaped inlays of turquoise and maybe other things. Just dont know what final finish will work on it.

Help?

Since it will be furniture, and I am assuming the top itself mostly. You can get this pour on clear epoxy, it is 2 parts and takes forever for it to dry.
 
I use Envirotex Lite but nothing large scale and gets hard to find at times.

Kleer Koat Table works and I think I remember 3M or West Systems making one
 
Are you talking about aromatic red cedar (Eastern), or western red cedar? Aromatic can give you trouble with oil based and oil in the cedar. Especially around knots. No trouble with lacquer since the solvent is so hot. I have never used epoxy, don't care for that cheap craft show look. For water based, I would check with the manufacture. A 12' coffee table is huge! Must be in a BIG ROOM. Wait, everything is supposed to be bigger in Texas.
