I have an old variable speed 6" grinder. Can I make it into a polisher? I saw a video in the library on how to polish the CA finish with EEE and then diamon paste and would like to do that without having to buy a new machine. Anyone else do this?

Check the Beall buffing system. Even if you don't buy it, you might get some ideas from it.

Yes I've seen some set up (online) matching your description and it will work.
 
I've seen pictures of buffing wheels mounted in a bench grinder, but I don't know any more about it.

I have been using buffing wheels mounted to a long carriage bolt which I then hold in a Jacob's chuck on the lathe. Since I already had the chuck, the rest of the setup cost me about $8.
 
I got a pair of LH and RH http://www.woodturnerscatalog.com/cgi-bin/shopper?preadd=action&key=019-0001 and converted a grinder into a buffer.
 
Do you happen to have a picture of this? The adapters seem pretty expensive, what size grinder do you use? Do I need three buffing wheels or can I just use two?
