Dinner was lean ground beef cooked with onion and cabbage and mushrooms covered with fat free beef gravy. My own concoction. I rarely cook with a recipe. It was very good.

My niece was born and raised in a New Orleans suburb. Finished high school there. Now she lives in central TN. About twice a year, she asks me to write down my recipe for Cajun Gumbo (specifically chicken and sausage gumbo). I tell her she will have to come and watch - There is no recipe for a Cajun. It is all in the mind and heart!
