I have a few Chestnut burl blanks but they are not stabilized. Though do they have to be? I'm wanting to turn it for a customer and I just want to be sure it won't blast apart. So I guess all I'm looking for is where to buy one or info for how to stabilize one.

Stabilizing does more good for punky or soft wood than woods with voids. Those blanks look pretty solid from the photo. I believe with sharp tools and a light touch they will turn fine. Others will respond with methods of wrapping or soaking and coating with CA while turning if you have concerns, but I have used neither method.

Wonderful advice everyone! I look forward to using a carbide tool on it then to ensure the pen comes out okay. Definitely will post once it's ready!
