I am not seeing a way to fill fountain pens on recently posted pens. Are you unscrewing the feed and pouring the ink in? Right now this is my only hold up to beginning making my own.
 
You may not notice, but the feed holder is a separate piece that screws into the main body of the pen (on most anyway). Simply unscrew the feed holder & use whatever cartridge or piston converter you wish.

Depends on what type is being made. You can still use cartridges, you can use a converter, you can make it a bulb filler, eyedropper, etc. I don't believe any are filled by removing the feed, but rather there is a "blind" cap on the opposite end that is removed to reveal either the bulb, converter or opening for the ink to go into...
 
I make a seperate front section that holds the feed assembly and screws into the pen body via threaded connector that is glued into the tube. Unscrew the front section and you have access to the refill systems.
