Nice pen and colorful blank. There is a way to keep cheesecake from cracking. One can Google or I can ask the wife. Of course...the cracks take more topping. BTW, wife has a modification for her NY style recipe for pumpkin cheesecake. Let me know and I can send as PM. Don't know where she got the recipe but it rivals any restaurant or bakery.
