Many of my older clients don't want to upgrade to win 10 at all. MS is going to continue to support win7 for another 6 years, so they are just going to keep 7 until it is no longer supported, then buy a new computer with whatever the current OS is at that time.
To prevent the automatic "drive-by upgrade" to windows 10, download the utility
gwx control panel here

Run it and be sure to check the box that says do not upgrade to win 10
If you do change your mind, you can always switch it back.
If you were already upgraded against your will, it will just re upgrade if you roll it back to 7, so be sure to install the gwx to prevent it from upgrading again!
