I give you; Corn and black bean salsa!

Ok, go out right now and buy these materials. Make sure you buy a bag of scoop chips too.

1 can of white corn, drained
1 can of black beans drained and rinsed
1 green bell pepper, finely chopped
1 red onion finely chopped
1 or 2 cans Rotel tomatoes or petite diced tomatoes and a small can of chillies
1-3 tbsp of chopped cilantro (Fresh, not dried)
1/4 cup seasoned rice wine vinegar (I use a tinge more)
1/4 cup of oilve oil
2 tsp cumin
onion and garlic powder to taste
salt and pepper

Better the day after, but still the best thing you've ever put on a chip!

Dude, where are the real chilis? What you got there is nothing more than fancy ketchup!!! Now chop up a few Scotch Bonnets or Habs and then we can talk salsa!!![:p]

Joking aside, the recipe looks really good and is close to one I already use. I have been canning and bottling hot sauces, BBQ sauces, and salsas off and on for about 10 years. Nothing on a major scale (yet!!) just enough for family consumption and as gifts at Christmas time.

This was great, but we had to add a TEXAS touch to it. We threw out the green pepper and added Jalapeños, ditched the vinegar and subbed lime juice, added a handful of cilantro and used fresh garlic.

Next time I will probably leave the cumin out, great in BBQ, but didn't care for it in my salsa.

Looks good and will pass to LOML... I don't cook, don't want to cook, don't like to cook.. why I have a wife.. but agree with Cozee.. definitely needs some Jalapenos.. everything needs some jalapenos.

Hey, I never said anything about any Jalapenos!!!! I said to use some Habs or Scotch Bonnets!!!

Combined with mrplaces substitues, toss out the rice vinegar and add some Tequila and hang on!!!

I've got kind of a bad stomach. I like to eat hot stuff, but it'll keep me up belching acid all night [:(]

I don't know about your receipe but I can send you some Black bean blanks if you're interested
