This is where I learned everything I know about turning pens. You'll find the info you're looking for.

For an easy, foolproof wood finish, I recommend wet-sanding with wood doctors walnut oil followed by Pens Plus.

I just joined today. I am a retired educator who started making pens about six months ago. One thing I really hope to learn is to do a better job of sanding and conditioning my pens. I am sure I can get that needed help here.
There are many, many opinions on sanding and polishing. Lots and lots of products for polishing etc. Go with what you find works bestā€¦and more expensive isn't always better. šŸ˜‰

Welcome from NC!

Sharpen up those tools and you won't need to worry much about sanding.
Finishing... that's another story, and you will find a lot of info and opinions on it.
My primary advice is to research and ask questions before you start spending money that you wish you hadn't spent.
