Olive is beautiful wood and I have to +1 on the smell! I do end up having to watch the ends and keep CA handy as it can chip out easily, but I still love working with it. Was disappointed that Trader Joe's didn't have $6 cutting boards all over the store during the holidays last year for me to cut up.
