Attached is a root structure given to me yesterday. They asked if a pen could be made from the bulbs...I don't have a clue what it is. I don't know whether to boil it or saw it!

Well , it isn`t horseradish , so don`t boil it . Definitely a challenge root . I would pressure wash it , make absolutely sure it was bone dry , rectangularize it , clear cast it , cut into blanks , paint holes black or siver or a subdued red , cross all appropriate body parts , and start turning . Showing us the results is optional .
 
I would cut one in half and see what it looks like and also check the moisture content. Most"bulbs" like that contain a lot of water, and when they dry out, shrivel up.
 
How solid is it can you stick a knife blade into it. If it is real soft it most likely has a LOT of moister and will shrink up. If it is fairly solid you got a chance. I would take a small piece and microwave it. Now when nuking wood you need to weigh before and go slow cycles of maybe 30 sec. then 5 min. to cool and repeat till no more weight lose. If you go over 30 sec. you risk burning the wood.
