Cutting diagonal for segments

If you are first gluing the blanks side by side you should consider offsetting them at close to the angle you will cut them - it will give you a few more segments. 45 degrees works nice for chevrons, 50-55 works well for Celtic knots. If you are just looking to have different angles just about any will produce an interesting effect depending on you glue up.
 
And, sometimes, it depends on the design.
Ron McIntire had a design which required 30 and 45 degree cuts and staged glueups.
I copied his design and called it the harlequin.
