Both sides can be used.
This board has some beautiful color changes in the Walnut as well as curling at the bottom.

Very Cool. Your posts are really making me want to build a cutting board. I've only made one before - requested by my oldest son in a pattern that complemented a cheese slicer that I had made for him. I used Hickory, Walnut, Purpleheart, and some Yellowheart. It is a gorgeous cutting board. - Dave
