Aussie Pen Swap, What wood would you use?

Participating in the "Aussie" swap this year. I like to use woods that represent the good old USA. In previous swaps I used Cherry Burl & Curly Maple. What woods would you use and why please.

Stabilized Black Ash Burl. It is, in my opinion, the US's finest exotic. I get mine from upnorthburls.net.

Great option Chris. I would also add Buckeye, Box Elder or Desert Ironwood burl

Consider Desert Ironwood--neat grain patterns and a good hard pen.
