Making a set of cheese knives, forks and tools have been on my mind recently. Perhaps the top reason why is I recently made a commitment to put together a basket for a charity auction and thought a wine and cheese basket might be the way to go. If I'm going to make the cheese board I might as well make the cheese knife set while I'm at it.
Along with this, I got an email from PSI yesterday with new designs on a cheese knife set that looks much easier to knock out vs the existing styles from Craft Supplies.
I did a search on "cheese" through the site and there doesn't seem to be a thread on actual construction of the tools.
The Craft Supplies cheese tools have a blade style tang that seem like a fair amount of effort to put forth to make the tools. The PSI set is similar to the Rockler cheese tools in that it uses a steel insert and bottle stopper mandrel.
Has anyone made either style? Is there anything I should be concerned with or plan for with one vs the other?
