I've been developing a low carb pasta recipe, (check my website for the recipe). I borrowed a friend's pasta roller, and now I am ready to buy one for myself.

Do you have one? What brand? Would you recommend it?

I have an old Roma Pro made in Italy with the raviloli maker. If you have a Kitchen aid mixer, the pasta maker attachment works really well; and having both hands free is a big plus!!

I have an Atlas 150. If I was going to make any more than the occasional batch, I'd get either the motorized Atlas or the KitchenAid attachment.

You may also need pasta "drying" racks. I used to make my own pasta (from white, whole wheat, and alternative flours). I used a brand made in Italy. I wasn't a commercial model, but it was made very well.
 
I have the Atlas as well as the Kitchenaide attachment. I prefer the Atlas though. It is better at handling the stress than the Kitchenaide is. All the attachments like ravioli are available too. The motorized version would probably be easier to use though and less work.
