Are we at war with Eire? Here it is Wednesday and St Patty's Day is Saturday and not a single soul has mentioned the 40 Shades of Green, Leprechauns, corned beef and cabbage, the wearin' of the green or even Mrs O'Leary's cow. I canna believe it.

We've been munching on Corned beef for the last several days----funny, even the St. Paddy's day parade (held last Sunday, of course---Milwaukee is German, not Irish) did not get a lot of press.

+1 on the delicious. had mine 33 years now. last night what kind of corned beef and cabbage combo for saturday. she wont do lamb though.

Hmmmm

Well my wife is only half Irish, her father was German so we might have corned beef and saurkraut (not too bad a dish - I'm a little partial to Reuben sandwiches). My mother-in-law was a Quinn, her father was born in Ireland. My grandmother was a Beach - that could be Irish and her mother (my great grandmother) was a Connery and there isn't a lot of doubt about where she came from...
 
The corned beef and cabbage are still in the frig waiting to be cooked, but it's only Thursday. In the meantime I've dressed up a little just to get into the spirit.

started off with some single malt scotch, then went to some Jameson's Irish whiskey. Had a few Irish car bombs as well. Typical Wednesday evening.

real question
You make a "corned beef brine" (recipes are available on line and elsewhere). You put the beef in it and let it cure for about 2 weeks (some recipes say you can do it in 5 days - I don't believe them. It does not always come out red like store bought because some of the recipes do not include the ingredient (sodium nitrite) that makes it red. You can use any piece of beef, we usually used chuck roast rather than the brisket.
edit. There is no corn in corned beef....the corned comes from a name that was used to describe the 'grained' salt that was used in the brine.
