I started with slims and moved to the comfort type. I 've done a few Majestic Jr.s. Recently did a Gatsby V2, (a Sierra knockoff?), and wasn't all that happy with it. If slims are lower end and Majestics are higher end, what is the best middle?

Best middle is very subjective. Probably the easiest way for you to find that out is go to web sites or get some catalogs and go looking at what is out there. Personally I like Gatsby and Sierra. But you might look at some of the other jrs. Quite a few folks say good things about a number of them.
 
I think the middle is sorta split between the baron/jr gent for capped pens, and the 8mm euro's and cigar's for twist pens. The capped pens are more flexible, and are easy to modify with custom trim rings and finials. The euro's and cigar's seem to sell better to the general public, as opposed to "pen people". (for me anyway). YMMV
 
My choice for a middle line would be the Navigator. It is a nice size, not so small that you see no figure in the blank and not so large as to be unwieldy. You also have a choice of roller-ball or fountain pen.
