I might be venturing down this avenue in the near future but before I do I have a question. Will a 1 horsepower, 2.3 gallon air compressor work well with a 5 gallon pressure pot?

Yes, it should work. You are just pressurizing the chamber to the "X" pounds recommended for your chamber. A smaller air compressor will work and once you it your pressure point you are stopping the pressurization. Not a ton of air is needed.

Just be careful and do not exceed the recommended pressurization for your pot. It can explode and that would be very, very bad juju.
