And another welcome to IAP. As to woods and wood finishes that you mentioned, a special note concerning pens - pens are handled differently than large wood items. Finishes are more finicky when handled by sweaty hands and transported from air conditioned rooms to hot car interiors. But there are ways and finishes for that.
 
Welcome Rick! Check out the "Resources", "IAP Library" there is a wealth of information there!

I will agree with Lee; If an object is handled on a regular basis the finish must be robust and able to stand up to the dirt, oils, and bumps it will receive in normal use.
 
I must say that the archive and library has a lot of great information! Now to wait until I get back to the VA to try some. Yes I know...practice, practice, practice. I figure by tax return time I will be getting an affordable lathe and not one for only turning pens.
