As part of my business I buy kitchen cutlery from Hock Tools, install custom wood handles and sell them as completed knives. A few pics of the goods:

Thanks Charlie. Figured maple sure is popular and outsells all the others. Next closest is probably black walnut (not pictured). Personally, I like the Hawaiian koa most (far right).
