I finally got enough nerve to attempt to sharpen my new Sorby gouges only to experience the same problem I had with my old Crown tools. My gouges are overheating and showing signs of loosing temper even with a light quick touch. I have a standard 6" grinder setup with a 120 grit pink wheel.
I noticed someone posting the same question regarding 2 grinders I'm researching, Woodcraft's 8" slow speed that's discounted until the end of this month and Grizzly's Tormek copycat. I'm nowhere closer in making a decision even after reading all the comments.
At $79.99, the Grizzly is just an incredible value but I want to be able to use the jigs I already have. At 90 rpm, how quick is it to touch up a gouge? Will I risk any overheating issues with a 1725 rpm grinder?

What I do is turn on the grinder, then turn it off befor it reaches full speed. You can make a couple passes on the momentum of the wheel, then turn if back on for a couple seconds. That way I am not grinding at full speed.

HSS tools will not lose temper if the metal turns blue. That said, it is best to avoid that. Do you have a dressing tool? Dressing the wheel is important to keep the wheel cutting properly. A wheel that has not been dressed for a long time will generate more heat on the cutting tool. A properly dressed wheel will cut cooler and faster with less effort.

I have the Woodcraft two speed grinder and I am happy with it.

Are you sure that price is correct? It seems very low. The low-speed on the 8 inch grinder works very well.

That is correct. You want to be sure not to dip that tool in water to cool it as you will create micro fractures, just let it cool on its own. Just kiss it on the stone for a very light pass from the back of the wing around the tip and do the other side. For a touch up 1-2 passes should be enough. I hold the tool off the wheel because even the weight of the tool is too much pressure, IMO.
