What finish do you use on HOLLY so as not discolor it

On another note, though you may get more/better answers here, but I have used
BEHLEN Woodturners Finish on Holly with fairly good success.

In my hands, Enduro is the finish that changes any wood the least.

I also suggest Enduro, from my experence there is very little if any color change.
