I get tips emails from Woodsmith.
The topic of a recent one was storage of two part epoxy to prolong the shelf lift.
The first tip was to keep the two bottles separate.
The thinking is the bottles can off gas and cause thickening.
(epoxy farts?)
The other is to store the bottles in zip lock bags with as much air out of them as possible. Keeping moisture out.

I usually keep the two bottles right next to each other on the shelf.
Maybe true, worth trying.
