My mother loves elephants so I am wanting to get this kit before I turn a pen for her. I was hoping the trunk could be the clip portion of the pen. Anyone know where I can see a clip like this?

Not an inlay. Talking about the actual hardware being a trunk. Like the cat pen someone made where the clip was the tale of a cat and the band that separates the two wood pieces had kats engraved in it.
There is no elephant-styled pen hardware like what you are describing as for the cat pen kit hardware from PennState.
However, there is an elephant image on a wood blank, but it is an inlay that you have to put together.

In addition to the aforementioned inlay kit, Exoticblanks has an elephant-themed Rotocrylic blank. I've made a number of these in other patterns and they make a really nice looking pen. If you're only making a single barrel pen, the second blank blanks make great seam rippers or other projects.
