Easy cook out items

I wish I had thought of this earlier, would have been cool to try some this weekend, but what are your easy cook out items that seem to go over really well?

My main one is cut red potatoes up into chunks, pour zesty italian dressing, (can throw in a cut up onion or some bacon if you want) wrap them in tin foil and throw them on the grill until the potatoes are done through.

Potatoes, corn, carrots, peas, onions, peppers, and any other veggies you like cut in chunks, mixed with olive oil, butter, and Lowery seasoning, placed in foil, and placed on grill until the starches start caramelizing.
 
Similar to yours Ed...I nuke some small red taters for 2-3 minutes, let cool and smash with a cup or plate. EVOO and some special seasoning, grated parm and hit the oven @ 400* until toasty on top. Tomorrow at 0600, 6lb brisket flat and 4lb pork shoulder hit the smoker with some apple pellets. Grilled corn on the cob, brisket and roasted smashed taters...good day to live!

Pork Loin Roast, butterflied and packed with Garli GLaze from Pat the Garlic Lady at the renaissance festival. It's an Apple Garlic Spread like a chutney. Close it up, sprinkle with Lemon Pepper, roll up in foil and toss on the grill...Or you can use nice thick chops...
 
My buddy is having a BBQ on Monday and his wife takes a leg of lamb and treats it with some sort of brine and spices and then encases it in a thick crust of salt and he grills it. the salt crust gets hard like clay and he actually uses a hammer to break the crust. It is the most tender and tasty lamb that I have ever had.
 
My Favourite is "Boiled Woody Pears".
These pears grow in Western Australia and can be collected quite easily.
Place a handful in a saucepan and boil for three hours, throw out the pears and add half a bottle of JD, or similar, and drink to your hearts content. LOL.

Oh yeah, Ed, I love those red potatoes too. I have never added onion or bacon before, so thanks for the tip!
 
My favorite is Johnsonville brats (sliced in half lengthwise when done). Grill onions, mushrooms and peppers in tinfoil (marinated in Italian dressing) and put ALL this in a pita cut in half (also grilled in tinfoil). Delectable.

Yesterday I cooked ribs. They were good, but not awesome. Not the fall off the bone tender. I need to practice with ribs. However, my 17 yo daughter had them twice for leftovers, so that's a good thing. She's eating them now!

My favorite is pork tenderloin. I get the un-marinated kind, since I think they are too salty. Marinate them myself in Italian dressing. Mostly, I make my own, with balsamic vinagarette. I only cook them for about 10 minutes per side (x4). Here, they come in 2 packs. So I cook one with a sweet hickory junk for the girls. I prefer John Boy and Billys. Yummie!

The only thing easy at my cookouts is whatever the neighbor's wife brings over... and the neighbor's wife after about 3 margaritas ;)

I do like the potato idea edicehouse posted up and might try a play on that later in the week.

Keep the ideas coming.
