I have software called EvGraver for my NEJE 1000 that sort of does "grey scale". It separates the imagine into multiple layers, you then do multiple burns at different burn rates.

The issue is that there is not much difference between unburned and burned. Such as level 30 is burned 100% and 25 is unburned.
 
I think this may explain it better you sort of only have 3 levels of "Grey" and one is white.

There are two sites. One that promotes peoples shops and another that is just for the discussion on NEJE type lasers....might have entered the wrong one.

To answer your question grayscale can be done but can get tricky.
