Australia has about 900 species of Acacias, I got about a dozen of them here at home with maybe another few dozens out there SA state that I haven't seen yet.
Wattles are one of the most common varieties of Acacias around but, unless you are able to specify what Acacia you are looking for, the task ain't easy...!

If it doesn't matter which one...get some KOA. KOA should be easy to source.

I bought a nice Acacia cutting board at Bed Bath and Beyond for about $16. It has produced lots of pens. Was about 14 x 16 x 1" thick as I recall.
