I have a question about the vacuum stage. This may be a dumb question, but can I just pull a vacuum and then shut the pump off then seal the pot? Or do I need to keep the pump running the entire time? My pot will hold a vacuum for quite a while.

I leave the pumps running.

I have clear lids on my chambers and have the ability to watch what's going on. When the pumps are shut off and the valves are closed the bubbling stops within a couple minutes. Turn the pump back on and the bubbling resumes.

Logic dictates that if you aren't seeing air bubbles, you aren't removing any air.

Since he can see what is happening, I would say that Pat's observation makes sense. I was going to say that if your pot will hold the vacuum shutting off would be OK. When I did the US test, I left the pump on for about 1/2 hour at 23 inches.

I run my pump for a little while and every now and then kick it back on. I haven't had any problem with getting full penetration.
