For the rolling pins --- which style of rolling pin are you going to make??

If the american cylinder, with or without handles??

If handles, turned in place or added??

Length??

Wood choice -- or glue up, or one of the layered birch - spectrawood, etc??

Got a set of drive center and a live center?

Look at the kitchen supply sites to get some ideas, make a sketch, make a rolling pin.

(I generally make shorter french style with no handles 12 to 18 inches long -- fit to the lathe and they store easier)

As Ken suggested, there are many styles and sizes of rolling pins.
I have made several and most of my research was the old fashioned way. I Googled the subject. I did learn that most plans and recommendations, for whatever reason, gave dimensions larger than would be used in most households. There are no 'rules'. Do what you want or the eventual user desires.
Lamination is not a requirement at all. A nice chunk of almost any wood, by itself will work. I have used Bradford Pear and Maple.
A light rub with mineral oil is all the finish you will need.
The most important thing to remember is that the sides need to be parallel. A caliper can help with this.
