My wife uses Feibings alcohol based dyes on the gourds she decorates.
Would these be the equivalent of the alcohol dyes in the wood
catalogs such as the Artisian?
My other question is how do most of you finish pens made out of walnut?
I can't seen to get the smooth looking finish I want.

I have no idea about the dye.
The smoothing of the open pores on Walnut also works on any open pore wood. I apply a coat of thin CA using wet/dry paper. This fills the pores with sand dust and it is held there with the CA. Otherwise, it takes many layers of CA with it having to be leveled eventually with paper anyway. It seems when I do it by leveling, I always sand through anyway and have to apply more finish. As always, YMMV and molt likely will.
Oh yes, be sure to use a colored grit that will not show up against the wood. If you use dark grit on Oak there will be nasty dark spots in the pores that will not go away, same with light grit on the walnut. Almost forgot that little thing. By the way, DAMHIKT either.
