Wood Drying Question

I was gifted a couple of pieces of persimmon fire wood. It had all sorts of worm holes in it, and I decided to take to a gentleman that has a bandsaw that he cuts up logs with, and see if he could cut them up for me, and he measured them and said, I sure can. I asked him to saw into one piece and see what it looks like, I was amazed at the way it looked. I would have made a pic but my daughter has my camera. Anyway it has some nice spalting along with the worm holes in it. He cut them into 1 inch boards and I cut one into blanks and it still had some worms in it.

Now to my question, the gemtleman checked the moisture level in the wood and said that it has 20% moisture still. Would you go ahead and rip them into pen blanks and then let em dry or would you let the boards dry and then rip them up?
