For higher end kits I prefer plainer woods or the solid resins. I either show off the blank or the furniture. Both just becomes gaudy. (Of course some of the guys here have done some amazing stuff. I can't pull it off though...)
Like many folks here on IAP, I tend to agree with the idea that an ornate pen should use a somewhat plain blank. If you use a very "busy" blank it can sometimes clash with the ornate hardware in some of the kits you mentioned. That being said. I've done a couple in nice dark rosewood burl and they came out very nice. Irish Bog Oak also matches up nicely since it is dark and has such an interesting story behind it.
I like the black w/ gold TruStone or white w/ gold for those kits.
I just think they look great. They don't overpower the pens, which can
be rather ornate, yet the blanks can hold their own no matter what you
put them on. They have a good, solid feel too.
I have made several Statesman pens using Amboyna and African Blackwood. They are my favorites! I am in the process of making one out of Black Onyx. It is really going to look nice as well. The dark color really brings out the hardware...
