I see all over this site about stabilized wood, I know that the wood has to be dry wood to turn it properly, but what is the meaning of stabilizing wood. I know I know its silly but I cant learn if I dont ask :)

Chris ... the stabilization process is not just for filling voids and cracks. The materials used to stabilize also prevent the wood from absorbing water, oils, dirt, etc.

Many people do not like the 'feel' of the wood after it has been stabilized as they say it feels like a plastic. That depends on the material used.

Also, check your profile and re-set two items .... Your signature is wrong. CHIS should be Chris, and also Isaih is mis-spelled. Should be Isaiah.
