The top one reminds me of marble wood.

I would guess the second one to be walnut burl.

The third one is a beautiful wood, but don't know what.

Yeah, the first is Olive Wood (technically it's Mount of Olives Olive Wood, or JOW (Jerusalem) - a little north of Bethlehem, but I won't quibble.)

One down. I'd never even heard of the middle one before. It does look like Thuya burl (a very cool wood.)

Good call. Yes, the second is cottonwood burl. I'd never even heard of cottonwood, but it is the state tree in three states.

Neither of the last two are stained in any way, except for the fact they're both burled, which does goofy things to wood.

#1 = JOW, or MoOW
#2 = Cottonwood burl
#3 = ?

And we have them all.

It was from BB at AZ Sil, and it just said "maple burl" on it, but you might be right on the 'root' part as well. The only thing arguing against that is the presence of flecks of light maple color here and there. Could be from higher up in the tree.

#1 = Olive Wood (Jerusalem / Mount of Olives)
#2 = Cottonwood Burl
#3 = Maple Burl (possibly root burl.)

Thanks for looking everyone! :)
