I like both pens very nice but I have a question abought the pine cones
do you gather them while they are green or after falling from the tree.

After they have fallen and have turned brown, most of them have opened but some are still closed and tight. I stabilized them with thin CA and then drill them for the tubes.

Any recommendations on size of the cone? I've been looking at the pine cones that litter my back yard this time of year. Most in the 4-6" overall size range, but doesn't look like much meat at the heart. Maybe I have the wrong kind of pine tree to do this.

It really does not take much, most of my cones are 3"to 6". I find that the great big one the size of cantaloupes are too big, the center is to soft.
Any thing smaller and the nuts will come out and leave the tube exposed.
Below is some photos of some cones to show what you need. the first one is a slice lengthwise and as you can see you have lot of white wood inside but it is tapered. the other one shows the center where you want to drill and center your tubes (as best as you can). If you have any more questions send a PM and I will be glad to try and help.
