I have a piece of Jawbone I haven't cast yet. How is that material to turn?

Not bad Mike, take your time and stop a couple times to give it a CA bath
and you should have no problem, I am careful not to heat it up,drill slow with a water bottle to keep the drill and hole cool,high speed small cuts and patience
because of the material density difference I usually finish off with some 180 wet or dry and a block to make sure everything is level before starting the finish process.

Those jaw bones are interesting. Are they really bone? Do they turn easy?

Yes, they are real jawbone. As mentioned above for turning and drilling.
